Ingredients : 

2 tbsp olive oil
4 thinly sliced scallions
1 tsp dried oregano
8 large well beaten eggs
Kosher salt and freshly ground black pepper
4 (10-inch) flour tortillas
3 ounces fresh baby spinach leaves
½ cup of (4 ounces) crumbled feta cheese

Instructions: 

1. Prepare four parchment paper squares measuring 12 inches each.
2. Warm the oil in a large nonstick skillet over medium heat. Cook for 2-3 minutes, or until the scallions start to soften, after adding the oregano.
3. While continually stirring, add the eggs, salt, and pepper, and cook until the eggs are starting to set but are
still runny.
4. Place the spinach in the pan after removing it from the heat. Return the pan to heat and lower the heat to
medium-low. Cook for a further 1-3 minutes, or until the eggs are done and the spinach begins to wilt
(some leaves will still be unwilted).
5. Place the eggs on a dish and let them cool for a moment. Clean the skillet.
6. Warm up the cleaned pan over medium heat until it is hot. now warm the tortillas for 15 to 20 seconds on
each side, flipping with tongs, until softened and lightly browned in places, but not crunchy. To keep warm
and malleable, stack on a platter and cover with a tea towel.
Make the wraps
7. Place a quarter of the egg filling along the bottom two inches of a tortilla. Add 2 tbsp of feta cheese.
8. Overlap the filling with the tortilla’s bottom border. To properly wrap the filling, fold the sides in and roll. Wrap in the parchment paper, seam side down. Repeat with the remainder of the filling and tortillas.
9. Before serving, keep the wraps in the refrigerator.
10. Set oven’s temperature to 350 degrees Fahrenheit.
11. Place the wraps on a baking dish with their parchment paper still attached, and heat for 15-20
minutes, or until heated. Take out the food from oven and discard the paper. (You can also reheat
individual wraps in the microwave, but bulk warming is better done in the oven.)
12. Serve each wrap by slicing it in half diagonally.
