Ingredients :

1 pound 85% lean ground beef
½ diced white onion
2 pressed or minced garlic cloves
2 tsp cumin
2 tsp chili powder
1 tsp garlic salt
1 tsp salt
1 tsp pepper
2 cups of tomato juice
¼ cup of yellow cornmeal
12 taco shells
2 cups of shredded cheddar cheese
Optional Toppings

Instructions : 

1. Put the ground beef in a large pan and brown it over medium heat, breaking it up as it cooks, for
approximately 10 minutes.
2. Sauté the onion and garlic until the meat is nicely browned and the onion is transparent.
3. Add cumin, chili powder, kosher salt, garlic salt, and black pepper and simmer for another 1-2 minutes
while stirring often.
4. Stir in the tomato liquid and cornmeal and cook, stirring periodically, for 10-15 minutes, or until the juice
has simmered down and the cornmeal has softened. Add additional tomato juice or water if the mixture
becomes clumpy.
5. Put the taco shells on a baking sheet or in a baking dish. Fill each with about 1/3 cup of meat and top with
cheddar cheese. Broil until the cheese melts in a toaster oven or oven.
6. Serve the tacos with their garnishes.
